Four varieties, each with their own character and identity, and a cultivation and process philosophy which aims to extract the extraordinary organoleptic peculiarities of the oil that derives from each, while paying attention to preserve the natural biodiversity of this region and protect the environmental and landscape integrity of our territory.

the typical Cultivar of Umbria

Moraiolo: one of the most typical cultivars in Umbria. A variety defined “rustic” and “tenacious”, the only one to hold high ground soils, particularly steep and stony. The fruit, although small and very compact, is highly productive and rich in phenolic substances. Moraiolo produces oils of great character, more savory than aromatic, and with distinct notes of bitterness and spiciness.

The Cultivar of Giano dell'Umbria

San Felice:  it is the native variety of Giano dell’Umbria, and it cannot be found anywhere else in Umbria or Italy. This ancient variety and cultural heritage of this land is an elegant and majestic tree, with average size fruits.  If expertly worked, these olives produce balanced oils, with aromatic notes that create interesting combinations in our products for you to discover

The other Cultivars

Frantoio: a cultivar present throughout Italy, which produces fleshy fruits rich in aromatic and phenolic substances. The extra virgin olive oil obtained is generally very fragrant and elegant in taste.

Leccino: cultivar present throughout Italy, a highly productive plant. The oils obtained have a delicate and noble soul, and a round and harmonic taste.

This is a blend obtained from Moraiolo, Frantoio, Leccino ad San Felice varieties, trying to balance out the characteristics of each cultivar.

It is named after the feeling we get making this oil, which every year takes on new life according to the organoleptic characteristics that develop in the various cultivars.

Monocultivar Moraiolo

Moraiolo is an ancient olive variety which is typical of Umbria, and it produces an extra virgin olive oil of great character. It’s strong and powerful, without losing sight of balance.

Monocultivar San Felice

San Felice is an ancient native variety, one of those expressions of biodiversity that characterize the Italian and Umbrian olive heritage. An oil to savour.

About Slow Food Presidium


This oil is a selection of olives from organic farming of the Moraiolo, Frantoio and Leccino varieties, harvested in the hills. This certification allows you to control the entire supply chain, from the agronomic one – in which organic fertilizers are used – to the entire processing cycle.

Dop Umbria

This blend is made according to tradition and in compliance with production regulations for the olive groves located in one of the sub-areas most devoted to olive growing, namely the hills of Bettona, Collemancio and Giano dell’Umbria. Our DOP is an expression of the typical character and scents of Umbria. It is made from Moraiolo, Frantoio and Leccino, expertly blended in different percentages every year.

"L'Olio" Nuovo

LIMITED EDITION – From the first olives of the Frantoio and Leccino cultivars, harvested in advance. A concentrate of flavors to try on our traditional dishes. Limited edition for food lovers.
